Peanut Butter Chocolate Chip Energy Bars

My mom (64) is on a mission of reviving her old life and adopting a healthy way of living.  She has a sweet tooth but she’s scared she would have to give up her sweet treats in order to be successful at it. 

This is a myth and a great misconception. Just because something is sweet doesn’t necessarily mean it is unhealthy. Yes on this life style you can have you cake and eat it. All you need to know is when and how to make them. I whipped up our favorites Peanut Butter Chocolate Chip energy bars. They taste like cookie dough but are made with just 4 healthy ingredients! 

These Peanut Butter Chocolate Chip energy bars are gluten free, grain free, and dairy free, and could easily be made peanut free by substituting with almond butter. 

These are the ultimate easy snack guaranteed to curb your sweet tooth any day.

Peanut Butter Chocolate Chip energy bars

1 cup all natural peanut butter
1/2 tsp pure vanilla extract
1/4-1/3 cup Mini vegan and soy free chocolate chips  


Do this:

  1. Place dates, peanut butter, and vanilla in a food processor with the S blade, we used our VITAMIX*.
  2. Pulse until mixture resembles large moist crumbs.
  3. Pour mixture into a small casserole dish lined with parchment. Use clean hands to spread mixture evenly across pan, pressing down firmly. It’s alright if it doesn’t cover the entire pan, just press them out to the desired thickness.
  4. Sprinkle chocolate chips evenly across surface, pressing gently to keep them in place.
  5. Refrigerate until firm, then slice into bars with a sharp knife.
  6. Makes 10-12 bars.


*If your dates are not sticky and moist, you can soak them in warm water for 10 minutes, then drain. But be sure to drain thoroughly and pat dry to prevent the crust from getting soggy.
