Vitamix at work – Protein packed quinoa breakfast pudding

 It is 8:30 on Sunday morning, following the day we brought the Vitamix 6300 home.  I rush out of bed to make my first meal in the brand new high power  Vitamix.  I decided to make my everyday favorite quinoa breakfast pudding.  I have to say I am quite impressed.  My breakfast dessert was very creamy and silky like never before. This is how I made it:

Ingredients:

1 cup cooked quinoa

1 cup water

1 cups unsweetened almond milk

Stevia and coconut sugar to taste

1/2 teaspoons pure vanilla extract

 

Steps to take:

Cook quinoa according to instructions on the package use more water than necessary to make it very soft.

In your Vitamix, combine quinoa, milk, sweeteners and vanilla.  Turn your blender on smoothie setting and switch the start button on and blend.

Pour into bowls and allow to cool for a few minutes before serving (pudding will continue to thicken as it cools). Sprinkle with additional coconut sugar to garnish and enjoy
